The other morning as I was planning out breakfast I looked into my fridge and saw raspberry jalapeno jelly. I took it out and was determined to use it. This is the delicious open face sandwich I came up with.
You will need:
Bread (I used a delicious loaf of multigrain bread from Harmon's)
Raspberry Jalapeno Jam/Jelly
Chipotle Cheddar
Goat Cheese
Turkey
Slice your bread to about half inch slices and put them in a panini press. You can also toast them or skip this step altogether if you'd like your bread softer. Then top each slice with the jelly, chipotle cheddar, turkey (I put it on the skillet awhile to heat it up but that's optional) , and finally goat cheese. You can then put it on a skillet and cover it so that all your cheese melts to gooey deliciousness.
I served it with peaches and green tea and it was amaaaazing. I hope you try it out because I love it and I'm sure you will too. It's super simple and super delicious.

Captain America Cake
I remember the day my cousin approached me asking for a favor. He put on his cutest little pout and little boy voice and said, "Meli, will you pleeeeease make a Captain America cake for my birthday?" I thought sure why not I can do his shield or something like that. My cousin quickly corrected this by telling me he wanted a specific cake. One that looked like a flag when cut into. At this point I was terrified. I'd never made a big cake before I was more for making things really simple but still delicious. So when my cousin asked me to make this complicated cake I don't know what possessed me to say yes. I guess I'm just a sweetheart.
So this is what I did. I started by doing research and found a very helpful video on youtube http://www.youtube.com/watch?v=uZmpgHqOIW4. I pretty much just followed this video except for a couple of things. First off one cake mix WILL NOT be enough you'll have an itty bitty cake. I used three. Second thing that I did different was my cousin really wanted a chocolate red velvet cake so I made that instead of another white cake. The only problem with using that is the red isn't very vibrant. Also, I made my own fondant and frosting but you could definitely buy those.
Things you will need:
Two White Cake Mixes (and the ingredients called for)
One Chocolate Cake Mix (and the ingredients called for)
Red Velvet Flavoring Liquid
Red Food Coloring
Blue food coloring
If you're making fondant
2 16 oz bags of small marshmallows
4 lbs powdered sugar
2 tbs water
Frosting
Use your favorite recipe
If you are making your fondant make it the night before. Throw your marshmallows in a large microwave safe bowl with the water and nuke it till they're puffed up (about 2 min.) Grease a wooden spoon well and use that to the mix the marshmallows. The mixture should be kinda runny and most of the marshmallows combined. (I chose to color it after but you could do that now and it may be easier just split the mixture in half and keep one half white and split the other half in half making one blue and red.) Then you add the powdered sugar slowly. First using the spoon to mix but when that becomes to difficult you can toss it on to a greased surface and knead the rest in. Once you have used all you sugar and reached the correct consistency you can color your fondant by separating in half and keeping one half white and separating the other half and making one blue and one red. Grease the outside of each ball and wrap them in saran wrap and let them rest over night.
Make your cake mixes according to the instructions. Keep one white and add blue food coloring to the other till you get the shade you'd like. Then whip up your chocolate cake mix and follow the Red Velvet flavoring instructions for amounts (you can add more red food coloring if you'd like.) Pour your mixes into your pans (I used 10 in) and toss them in the oven. When they are finished baking let them cool completely. At this point I will direct you to the video because I can't explain the process of cutting the cakes as well as watching the video will show you. Also, the video will show the process of making the decorations.
So this was the end result. It wasn't perfect but I think I did a pretty good job. It was a very difficult cake but my cousin and family loved it so it was definitely worth it. I do suggest using a white cake for the red as well just for a nicer color but flavor wise it was nice to have something else thrown in there too. I hope you enjoyed this post and will try making it because it'll be totally worth making the Captain America lover in your life smile.

Simple S'more Cupcakes
So a couple of months ago I was at my grandmothers house and I was really craving s'mores. Unfortunately, she didn't have any chocolate so I was left disappointed. Later on that night I was talking to her about it and she mentioned that maybe Nutella would work. When she said this it reminded me of a recipe I once saw of Nutella filled cupcakes. At this point I got excited and once again looked through her cupboards collecting all the things I needed. It wasn't much because I was trying to keep it quick and simple. Here what I used:
Graham Crackers
Nutella
Chocolate Cake Mix (and the ingredients it calls for)
Jumbo Marshmallows
I whipped up a quick batch of chocolate cake mix, poured it into cupcake liners and tossed them in the oven. I then took them out and cored them with a paring knife. I filled them with a decent amount of Nutella and crushed up Graham crackers. I used the piece I cored as a cap then topped them with a jumbo marshmallow. Then I tossed them back into the oven just long enough for the marshmallow to melt and get a slight roasted look to the top. About five minutes.
Unfortunately. I didn't take many pictures but they were delicious my cousins and my grandparents loved them. They're best warm but still work cold. I personally nuked them in the microwave for about 10 seconds to get the marshmallow nice and gooey again after they'd gotten cold. It was a quick and delicious treat that my whole family enjoyed. Maybe one night when I have more time I can make this recipe even better and actually make the cupcakes from scratch.
